The Houghton Hall Game Cookery Book was created to raise funds for a new and urgently needed classroom at Harpley Primary School. The classroom has been completed but the book continues to fund the costs of the new build, a facility that has nearly doubled the size of our small village school.
Laine Christmas Hall, Cook to Lord Cholmondeley at Houghton Hall, shares her traditional country recipes and passes on her favourite meals, created both at Houghton Hall and in her own kitchen at home;
‘I have created this cookery book to share some of the game recipes I have used both as cook to the Marquess of Cholmondeley as well as chief cook to my own family. Many of the ingredients I use are grown or raised within a few miles of our cottage, which overlooks the estate. We have all returned to the wisdom that fresh, natural, local ingredients are beneficial in every way. Here at Houghton we can claim all three, something that is reflected over the following pages.
‘Good game cooking is nothing without a decent life lived by the creatures themselves. It is also about the complimentary tastes and textures served with it. Sometimes the only thing needed is a round of warm buttered toast, a dash of pepper and a wedge of lemon. But there are lots of interesting and delicious ways to prepare the vegetables grown around us here at Houghton. They are raised with the game and cooked with it, the right way to go about things if you ask me. I hope you enjoy the results as much as we do.’
